It’s the day after Christmas and it was a fabulous day, but now to relax! The day after Christmas also means…leftover turkey! What to do with all that turkey?! When I was young, my Mom would make tuna noodle casserole, so I had the idea to substitute the turkey for the tuna. Who wants to cook more? So, I decided, let’s try and make it a “one pot wonder”!
Turkey One-Pot Wonder
4 cups chopped cooked turkey
2 large chopped potatoes
3 large chopped carrots
2 stalks chopped celery
1 cup chopped onions
4 (10 ¾ oz) cans condensed cream of mushroom soup
2 cups chicken broth
4 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon poultry seasoning
1. Mix the turkey, potatoes, carrots, celery, onions, soup, chicken broth, butter, garlic powder and poultry seasoning in a slow cooker.
2. Cook on LOW for 8 hours or HIGH for 4 hours.
