Spring is in the air, and this means that I am cleaning out closets and Spring cleaning! So, why worry about making dinner? Grab your slow cooker (KitchenAid Slow Cooker: amzn.to/1oBILp9) to free up your time. Now I know, whenever you hear “roast” you think, “oh no, I will be all day in the kitchen.” Not a chance! One-Pot Wonders: Pork Roast!
1 cup chicken broth (I use Swanson Natural Goodness 100% Fat Free in a can)
2 ¼ lb pork roast
2 cans of potatoes (or 5 medium potatoes cut in chunks)
1 cup frozen chopped onions (or 1 medium raw onion)
1 bag frozen peas & carrots (or any vegetable you like)
½ tsp black pepper
1 tsp paprika
½ tsp onion powder
¼ tsp garlic powder
1 tsp rosemary
- Pour chicken broth in bottom of slow cooker
- Place pork roast, potatoes, onions, and vegetables across the bottom of the pot. Evenly spread black pepper, paprika, onion powder, garlic powder, and rosemary over the pork roast, potatoes, and vegetables.
- Cover the pot and cook on high for 4 hours or low for 8 hours. (Remember, no peaking; it will take longer to cook)
