I absolutely adore smoothies! Any type of smoothie—fruit or veggie, or fruit AND veggie! It occurred to me recently, when my husband and I were on our cross-country road trip (something we talked about doing for over 30 years), that I could actually have “smoothie withdrawal”! Yep, you heard it here. Who knew, that the United States of America restaurants were not as smoothie savvy as I!! What?!?!?! Really!!!! They are a quick and healthy way to get your protein and fiber….AND it’s fun!!!! You can add ANYTHING you want. My fave is the Banana Blueberry Kale Smoothie.
Recipe follows. However, you can always change it up…Just throw all the ingredients in your blender at once and puree away!
So, go ahead, mix it up a little (get it?!)
½ cup non-fat Greek yogurt
¼ cup water (more if smoothie comes out thicker than you would like)
2/3 cup fresh or frozen blueberries
1 cup kale
1 packet of stevia
1 squirt of lime juice (1/8 tsp)
sprinkle of turmeric and ginger powders
3 ice cubes
