SUPERBOWL SUNDAY is February 7, 2016!
I LOVE watching the Superbowl, new-fangled commercials, and best of all…………..FOOOOOOOD! When my husband and I married, he never watched sports. He followed his father and watched Westerns every weekend. NOT in my house. Watching sports is a very warm and cozy time for me. I know that sounds weird, but that’s me! Anyway, I digress. One of my favorite foods to make for this day is my Cheddar Chicken Sausage Mini Subs. It is a healthier version of the original I used to make years ago. You may think it is more work to make something healthier, but this is easy! Go for it…starting on the 50-yard line:
Superbowl Cheddar Chicken Sausage Mini Subs
¾ lb Cracker Barrel 2% Cheddar cheese (that’s 1 ½ bars)
2 cups (12 oz. package) cubed chicken sausage (I use Aidell’s All Natural Smoked Chicken & Apple Smoked Sausage-it is FREE of nitrites and seedless!)
¼ cup mayonnaise (I use Cains All Natural Mayonnaise-it is free of preservatives!)
8 whole wheat hot dog rolls
spicy brown mustard
Mix sausage, cheese & mayo together.
Divide mixture among the 8 rolls.
Wrap individually in foil, place on baking sheet.
Bake in oven 350 degrees for 15 to 20 minutes.
Dip your sandwich in the mustard or spread it on the sandwich after it has been warmed.
