Sweet Potato Salmon Cakes

We have another amazingly healthy (and delicious!) recipe for you from our wellness contributor, Tara Felice! This is her special Sweet Potato Salmon Cakes recipe that we talked about on Graye Note Radio:

Sweet Potato Salmon Cakes (click here to print)

1 mashed sweet potato
3 ounces canned wild Alaskan salmon
1 fresh squeezed lemon
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1/16 teaspoon all spice
1/16 teaspoon paprika
a sprinkle of cumin
1/2 tablespoon fresh parsley
2 teaspoons chopped onions
2 teaspoons chopped celery
1 teaspoon coconut flour

ghee (for cooking)

  1. In mixing bowl, combine all ingredients.
  2. Heat ghee in a cast iron sauté pan (or a nonstick sauté pan). It is important for the pan and the ghee to be very hot.
  3. Form the ingredients into a patty with your hands and place in the pan. Cook each side for approximately 4 minutes before flipping. You don’t want to flip too soon or the patty will fall apart.

I made these for lunch last weekend and loved them!
